Easy Peasy Oh So Cheesy Creamy Baked Mac n Cheese
Do you have one dish that no matter how it is cooked you really wish there was something different about it? For years I was that way about Mac N Cheese. I absolutely LOVE baked Mac n Cheese! But it always seemed to be missing something or was too time consuming to make especially as a side for an everyday dinner. Putting together the roux, melting the cheese and soooo many dishes just to find out that it felt like something was missing or it wasn't cheesy enough or was on the dry side. I started playing around and OMG! I found our family's perfect recipe! In it's most basic form there is only 4 ingredients but the possibilities are completely endless! You can add some diced steamed vegetables to give it that healthy touch, or you can add smoked meats or crumbled bacon or pepperoni for that wonderful meat lover in your family, you can even play around with added spices if you like. I have personally found that a simple ground black pepper is enough for most meals but I have also done red pepper flakes, cayenne pepper, green chilies, fresh jalapenos, minced garlic, rosemary.... the list goes on and on! Add a nice layer of seasoned bread crumbs to the top for that festive holiday bake. Best of all this recipe works with just about ANY hard to semi soft cheese so feel free to get creative and use whatever cheese, pasta or mix ins you have on hand!
Easy Peasy Oh So Cheesy Creamy Baked Mac n Cheese
Ingredients
1lb Cooked Pasta Barilla Elbows
1C Sour Cream
1C Real Mayonnaise Hellmann's REAL Mayo
5C Shredded or finely crumbled cheese
Mix ins of choice
Yup you are thinking OMG Mayonnaise..... Trust me on this! It is AMAZING and you wont taste the mayonnaise at all once it is all baked together!
Preheat oven to 350ºF
Mix all ingredients together in large mixing bowl and mix until pasta is well coated.
Transfer to large baking dish.
Top with a layer of seasoned breadcrumbs if desired.
Bake until center is hot and top begins to brown. (approx 30-45 minutes).
Remove from oven and serve.
