Raspberry Glazed Pork and Rosemary Roasted Potatoes
These two recipes have become family favorites in a short amount of time. The first time I made it my husband looked at me like I was crazy. One bite and he became hooked. It was a proud moment for me as he is very much a grilled meat and mashed potato kind of guy.
Both recipes are super simple and fairly quick to put together with the bulk of the time being the actual cooking in the oven. Of course both recipes can be tweaked to fit your family size and taste and still come out wonderfully! While I typically use pork loin because we purchase the entire loin in bulk and cut down to our needs this recipe will work just as well using a pork tenderloin or thick cut chops.
Please keep in mind that it is very important that you use preserves or fruit spread and not jam or jelly as the texture and flavor is highly affected
Raspberry Glazed Pork
Ingredients
Raspberry Glaze
12 oz Jar Raspberry Preserves Smuckers Raspberry Preserves
1/4C Orange or Lemon Juice
2T Crushed Red Pepper(Optional or to Taste)
2t Minced Garlic(Optional)
Pork
3LB Pork Loin, Tenderloin, or Chops
3-4T Olive oil Pompeian Extra Virgin Olive Oil
Salt, Pepper & Garlic Powder to taste
Raspberry Glaze
For the Raspberry Glaze
Whisk together all ingredients in small sauce pan. Bring to a rolling boil over medium-high heat. Reduce heat and simmer stirring occasionally until thick enough to glaze the back of a spoon.
For the Pork
Preheat oven to 425º F. Pat pork dry and rub with olive oil. Place pork in glass baking dish. Sprinkle with rosemary salt and pepper and pat down. Place in preheated oven for approximately 15-20 minutes.Remove from oven and pour the Raspberry Glaze over the pork. Return to oven and continue baking until the pork reaches an internal temperature of 155ºF (Approx 20-25 minutes for a pork loin). Remove from oven and let rest for 5-10 minutes. Slice and serve with additional glaze from baking dish.
Rosemary Roasted Potatoes
4lbs Potatoes cut into 1 inch cubes
1/4 Cup Olive Oil
3T Rosemary
Salt & Pepper to Taste
Lightly oil baking dish or sheet pan. In large bowl combine all ingredients and mix until potatoes are well coated. Spread into a single layer in baking dish. Roast in 425ºF oven for approx 45 minutes or until lightly browned and cooked through. Remove from oven and serve.
