Decadent Cinnamon Peach Cobbler

Holiday parties are in full swing. And everyone loves a good desert! Two of my absolute favorites are peach cobbler and cinnamon pudding. So I was playing around in the kitchen and as usual couldn't decide what to make so I just started putting things together and VIOLA! This dish is what I imagine would happen if peach cobbler and cinnamon pudding would create if they had a love child. The base is moist and gooey The top is sweet and cakey. Served warm with some simple vanilla ice cream and you have a small slice of cozy winter heaven!

Ingredients

1/2C Butter


Filling
1 28oz Can Peaches in heavy syrup (Drained and 1/2C syrup reserved)
1C White Sugar
1T Molasses
3t Cinnamon
1t Nutmeg
1/2C Reserved Syrup from peaches

Base
1C Flour
1C Sugar
3t Baking Powder
1/2t Salt
2/3C Milk (room temp)
1 Large Egg (room temp)
1t Vanilla Extract


Preheat oven to 400°F

Place butter in a 9x13 Baking dish and put in oven to melt

In medium sauce pan combine peaches, sugar, molasses, cinnamon, nutmeg and reserved syrup. Simmer until sugar is fully dissolved. Remove from heat and allow to cool.

In medium mixing bowl combine flour, sugar, baking powder, and salt. Combine well.
In small mixing bowl whisk together milk, egg and vanilla. Add milk mixture into flour mixture and mix thoroughly.

Remove baking pan from oven and tip to ensure bottom and about half way up sides are coated with the melted butter. Pour batter into baking dish making sure not to stir ( we want the butter to remain as independent as possible). Spoon peaches evenly over batter making sure not to stir. Drizzle remaining syrup over peaches and batter.

Bake for 35-45 minutes. Serve warm with vanilla ice cream.
